Stir-fried duck blood with leeks

Method:
Cut the duck blood into one-centimeter-square pieces and blanch them in boiling water until cooked, then set aside. Blanch the bean sprouts in boiling water as well (you can blanch the bean sprouts first and then the duck blood, which saves water and energy). Cut the Chinese chives into pieces
Heat oil in a wok until it reaches 40% of its smoking point. Add shredded ginger and sliced garlic and stir-fry until fragrant. Then, add the blanched duck blood and stir-fry over medium heat for 1-2 minutes. Be gentle to avoid breaking the duck blood. Season with salt, pepper and cooking wine
Then add the Chinese chives and bean sprouts and stir-fry evenly before serving
